Macaroni and Cheese

Let’s be real here. We have all had that day that just completely drains us. Whether it’s a long day at work, or a crazy day at home, by the time dinner comes around we realize, “Yeah, I’ve got nothing.”

This was one of those days. I got home late from work, and had hungry children to feed. I didn’t have left-overs in the fridge either. So the choices were buy fast food or pizza on the way home, or scrounge a meal out of what was in my pantry. But remember, I had no energy, and hungry kids, so it had to be quick.

So I made Mac and cheese. It may not be the poster-child for “healthy” food, but it is certainly a better option than fast food, or cheap pizza. Served up with cottage cheese and strawberries, it actually was a fairly well-balanced meal.

Real life is not about perfection. Some nights we need an easy meal, and that is 100% ok!

The Meal:

  • 1 cup of Macaroni & Cheese

  • ½ cup of cottage cheese

  • ½ cup of fresh strawberries

Alterations:

  • Prepare the Mac & Cheese with 2 Tbsp of butter (rather than 4 Tbsp)—you won’t even notice the missing butter
